Home made pepper paste
You will need:
1 cup peppers of your choice (kambuzi has nice flavour but peri peri is more fiery)A handful of curry leaves (masala), chopped
Zest and juice of one lime and lemon
An onion, a bit of ginger and a few cloves of garlic crushed
Paprika for colour
A bit of salt to taste
Cooking oil
Method:
Crush the peppers, mix well with crushed garlic, ginger, onion and masala. Add lemon and lime juice, zest and salt. Sprinkle a little paprika over this ad stir. Heat a bit of oil and let it boil. Remove from heat and cool for a minute or two. Add this to the pepper mixture and let cool. Store in an airtight container and refrigerate.
